You like chocolate? Coconut? Peanut butter??
You’re in luck. Look what I’ve got for you:
You don’t have to bake these little delights, so they’re super easy, and yummy whether hot or cold. Also for those observing Passover this week, they’re unleavened!! 😀 An alternative to endless matzah brickle (my Jewish people say “Baruch Hashem!”).
Even my cat likes them… sort of.
(Yes, those are my pajama pants with cats in socks on them) Anyway….
- 6 tsp. almond milk
- 6 tsp. coconut oil
- 1 1/2 cups sugar
- 2/3 cups cocoa
- 3 cups shredded, unsweetened coconut
- 1 1/2 cups oats
- 1 cup peanut butter
- 1/3 tsp salt
- 2 tsp vanilla
- Heat almond milk, coconut oil, sugar, and cocoa in a large skillet over mid-low heat. Mix and let it cook for a minute, stirring occasionally so it doesn’t burn.
- Remove from heat. Add peanut butter and stir with a rubber spatula. Add vanilla and salt. Stir in coconut and oats.
- Spoon out by rounded tablespoons onto a cookie sheet lined with wax or parchment paper. You can either refrigerate them, or let them sit out until hard. If you live in a warm climate, keep in the fridge.
